Recipe: Fancy-Schmancy Dijon Salmon

Ingredients

4 – 3  ounce Salmon fillets, fresh or frozen

4 tablespoons honey

Spicy Mustard to taste

1/2 cup chopped pecans

salt and pepper to taste

Directions

Pre-heat your over to 350.

In a bowl, mix honey and mustard together. Use as much mustard as you want, please limit your honey as it is high in calories.

Take your 8×8 glass baking dish and give it a quick spray of vegetable oil.

Put your fish in the dish, packing it closely together. Don’t layer, just make sure the sides are touching. I use frozen fish for this as you don’t need to thaw it for this recipe.

Cover fish with honey/mustard mixture.

Salt and pepper if you desire – this recipe is so good you won’t miss it.

Top with chopped pecans – should be thickly covered.

Frozen fish – bake for 25 – 35 minutes. Thawed fish – bake for approximately 20 minutes.

WLW: Just when you thought it was safe to eat…

Weight Loss Wednesdays are BACK! Yup, it’s time to get serious about my weight…or more serious I should say. Over the past two years I’ve lost 57.4 pounds and I seem to have a mental block when it comes to hitting number 60. I get close then I sabotage myself so that I gain.

Why?

Heck if I know. My weight has been an issue all my life and honestly, I’m so OVER IT. After meeting my biological sisters I realized that I truly have the Big Ass gene. We’re all close to six feet tall and broad so thin and dainty is out for me. <g>

So, today I set myself up for success. I went to www.keyoe.com and bought a copy of their calorie / exercise calculator. It’s pretty cool – put in your food, measurements, weight, height etc and it calculates everything for you. You can also so set goals by date and the program calculates exactly how much you can eat, how much you should exercise etc. It’s cheap (14.95 for the XP version) and its easy to use.

I also hit the pool today (second time this week – WOOT) and I cooked yummy, well-balanced meals. So for day one, I’m doing good. LOL!

So my goal is set – to lose 2.6 pounds by February 1st, my fridge is stocked with healthy foods, my program is loaded and ready to go. Now I just have to behave myself. <g>

Better Luck Next Time Boys!

After working with computers for twelve years – I just got my first virus. Yes, my virus cherry has finally been popped.

This was a particularly interesting one as it was riding on the back of an active-x control from a website. I’d been on this site a million (and a half) times so when the Do You Want To Run This Control came up I clicked yes. A few minutes later a notice from Microsoft Security Essentials (a free virus product from Bill himself – just remember that you get what you pay for) that a virus had invaded. I clicked to kill it off and nothing. It came up three more times before the virus disabled MSE.

Tried to reinstall MSE only to be told I couldn’t because it was installed. So I uninstalled it (for all the good it was doing anyway – I’d have been better protected with a body condom and some vaseline) and the virus wouldn’t allow me to reinstall.

Then it disabled Task Manager.

Then it disabled my browser.

So after trying all my techie tricks to no avail – I’d no sooner get something running and this program would shut it down. Diabolical thing – it would bring up a window to BUY virus software…like I would do that. Silly rabbit – those tricks are for three year olds.

So I thought back to my hacking days (hey, I was doing it legally) and I asked myself – why am I using a flyswatter when I have a giant club at my disposal? So what did I do? Booted from the install CD and wiped the drive.

See, this virus was designed to turn PCs into dummy terminals and to harvest email addies from my email software. It would then spam my friends with viruses….and so on. Only one problem.

There wasn’t any email addies on that PC. See, I’d just installed the operating system on Monday. Basically this virus was trying to take over a…dumb terminal. I have to admit, it did make me giggle. All these years on countless PCs I’ve run around without any anti-virus and never had an issue. Got my first virus with Microsoft by my side. Gotta love that one. Hey Bill – up yours.

Oh, and the virus software this thing wanted me to buy? (http://www.kaspersky.com/virusscanner) Yeah, I’ll get right on that when they suck my big hard hairy- BEEEEP!
