Recipe: Fancy-Schmancy Dijon Salmon

Ingredients

4 – 3  ounce Salmon fillets, fresh or frozen

4 tablespoons honey

Spicy Mustard to taste

1/2 cup chopped pecans

salt and pepper to taste

Directions

Pre-heat your over to 350.

In a bowl, mix honey and mustard together. Use as much mustard as you want, please limit your honey as it is high in calories.

Take your 8×8 glass baking dish and give it a quick spray of vegetable oil.

Put your fish in the dish, packing it closely together. Don’t layer, just make sure the sides are touching. I use frozen fish for this as you don’t need to thaw it for this recipe.

Cover fish with honey/mustard mixture.

Salt and pepper if you desire – this recipe is so good you won’t miss it.

Top with chopped pecans – should be thickly covered.

Frozen fish – bake for 25 – 35 minutes. Thawed fish – bake for approximately 20 minutes.

Total Calories per serving: 193

Boy it’s been a while since I’ve posted. Went to Portland Oregon for Celebrate Romance – what a fabulous city. Tons of bookstores, coffee shops and these fabulous little indie stories all over the place. Portland is a city with personality…so unlike where I live.

Oh, and the conference was good too. :)

Another Update

No, my hand / arm isn’t any better and yes, I’m annoyed.

I’ve never been a good patient and I don’t intend to start now. It really annoys me that I couldn’t even open my juice bar today because my right hand is fricking useless and that’s enough to make me whine…

Okay, enough of that crap.

It’s obvious to me that I need to see the surgeon. My hand is no better though the bruising is fading which is a good thing. Tonight I finally figured out that I did seriously damage myself. How? Okay, stick your hand out and extend your thumb to make an L (or a backwards L). See the ‘webbing’ of skin between your thumb and forefinger. Mine is GONE.

Yes, gone.

So not only is it very painful to extend my thumb, my hand just looks odd. (and no, I’m not going to have plastic surgery to fix it, if anyone gets close enough to notice it that means I’m in the act of punching them) Maybe I didn’t notice it because the swelling was horrendous?

Finally, to add insult to injury, my dog, THE DACHSHUND, ate the brace I’m supposed to wear. I know, you can laugh, it is amusing to someone who didn’t have to pay for a new one.

What do you suppose is the going rate for a weenie dog rug?
